Everyone is thinking about eating healthier. But whether or not one can accomplish this feat on one’s own, is another question. Recently, I learned that one Boston based chef is coming to the rescue of the general population, Ana Sortun. Low in calories, easy to prepare and most importantly super tasty, you can now prepare a healthy, nutritious meal for two designed by a professional chef!
Soon to be available at Whole Foods, the gist of a Chef Set is that you decide between four flavorful sets, each of which contain 3 packets – a healthy grain, aromatics and garnish, along with the purchase of the three fresh healthy ingredients suggested in your set. Knowing that Maine shrimp season is presently upon us, I chose the Quinoa with Greek Herbs and Raisins Chef Set which required the addition of shrimp, broccoli and feta cheese.
Instructions included in the Chef Set are clearly written and easy to follow. Prepare, cook, and assemble are the basic components of this meal with some extra tips from Chef Ana. Not being familiar with Quinoa, I delighted in reading a few facts on the grain along with notes on cooking particulars, such as “cook for 10 minutes or until tender and the grain has barely popped.”
Adding the aromatic pouch containing golden raisins and pine nuts, along with mediterranean spices, made the quinoa release a sweet and earthy fragrance. After sautéing the broccoli florets briefly with a tad of olive oil and water, the instructions were to add 1/2 pound of peeled shrimp to the pan. My choice, the delicate, petal-pink, Maine baby shrimp, were cooked through in minutes. As I opened the garnish packet to sprinkle over the broccoli and shrimp combination, I suddenly inhaled the summery scent of fresh garden mint and orange. What an unexpected treat! With the addition of the final accoutrement, crumbled Feta Cheese, melting just a touch as it perched atop the warm shrimp and broccoli combo, my meal was ready to be assembled.
Quinoa with Greek Herbs and Raisins, Shrimp, Broccoli and Feta Cheese reminds one perhaps, of sitting at a outdoor cafe along the Mediterranean Sea, while eating a light, nutritious meal of fragrant grains and seafood. Hold on…it’s actually January in New England! How great is that? A meal that is not only healthy and easy to make, but makes you dream of faraway places.
